Squash Casserole

I cannot get that Usher song out of my head! Grrrrrrr..
Memorial Day weekend was very, very relaxing. We stayed in town and did absolutely nothing, but cook out, sleep in, and clean. I actually hurt my back sometime earlier in the week and went to see the doctor on Friday. He suggested lots of REST. However, I'm puzzled as to how to rest your back when you constantly have to load/unload the dishwasher, laundry, etc. It still isn't feeling much better and Justin has now decided that his back hurts too so I don't have an excuse. He goes to see the doctor later this week. Personally, I think he just wants an excuse so he doesn't have to pick up the slack around the house. :)

We are leaving in a few weeks to meet my parents in San Antonio for Father's weekend. I just finished putting together his gift. It's nothing big - we have purchased two gift certificates: one for Ippolitos (I MISS THEIR BREAD) and one for the Sun Dial since he works downtown. If you have known me for very long, you know that as a family we ALWAYS (and I mean always) went out to eat. My parents still do so this should be a good gift for Dad. Last night we has kabobs and squash casserole for dinner. I had someone ask about the recipe for the squash so here it is:

6-8 medium yellow squash
1 med. onion - chopped and sautéed
2 cups Ritz crumbs (about 1 sleeve)
2 eggs - beaten
1 cup sharp cheddar - grated
1 can cream of potato soup
2 T butter

Cut up the squash and boil 10 - 15 minutes. Salt and drain. Sauté the onion in the butter (I HATE onions so I leave it out). Mix onion, cracker crumbs, eggs, cheese & soup. Add the squash and pour into the baking dish. Cook at 400 deg. for 30 min. or till brown and firm. Optional: toast crushed crackers and sprinkle on top.
