I would NOT be Danielle from the NJ season. She is driving me crazy and crazy as in a point I can't stomach the show because of how she acts. Danielle drives me nuts like in a Speidi sort of way. You hope they aren't like that in real life (because everyone knows that reality TV shows are 100% real), but you wonder why they would even want to present themselves as psychotic on TV. Forget about the money - it's not worth the amount of people who think you belong in a hospital jacked up on medications.
This weekend we went to a BBQ and I found this awesome recipe from Annie's Eats. This has quickly become one of my favorite blogs to follow and I decided to make BLT Roll-Ups. They were so good! The only change I made was using Hidden Valley Ranch seasoning instead of the dressing. Whenever I try a new recipe I will not use low fat/fat free/light ingredients. I buy these items for our house, but would hate to ruin a recipe to save some calories. The only ranch dressing I had on hand was fat free so I didn't want to chance it. This recipe will actually wind up in my recipe box and will definately be made again.

Squash Casserole
I cannot get that Usher song out of my head! Grrrrrrr..
Memorial Day weekend was very, very relaxing. We stayed in town and did absolutely nothing, but cook out, sleep in, and clean. I actually hurt my back sometime earlier in the week and went to see the doctor on Friday. He suggested lots of REST. However, I'm puzzled as to how to rest your back when you constantly have to load/unload the dishwasher, laundry, etc. It still isn't feeling much better and Justin has now decided that his back hurts too so I don't have an excuse. He goes to see the doctor later this week. Personally, I think he just wants an excuse so he doesn't have to pick up the slack around the house. :)
We are leaving in a few weeks to meet my parents in San Antonio for Father's weekend. I just finished putting together his gift. It's nothing big - we have purchased two gift certificates: one for Ippolitos (I MISS THEIR BREAD) and one for the Sun Dial since he works downtown. If you have known me for very long, you know that as a family we ALWAYS (and I mean always) went out to eat. My parents still do so this should be a good gift for Dad. Very good deals on both, thanks to http://www.groupon.com/ and http://www.restaurantcom/ Check them out. And feel free to say I recommended you to Groupon (email: aidibabyau@aol.com) if you find a deal that works for you and if they ask.
Last night we has kabobs and squash casserole for dinner. I had someone ask about the recipe for the squash so here it is:
6-8 medium yellow squash
1 med. onion - chopped and sautéed
2 cups Ritz crumbs (about 1 sleeve)
2 eggs - beaten
1 cup sharp cheddar - grated
1 can cream of potato soup
2 T butter
Cut up the squash and boil 10 - 15 minutes. Salt and drain. Sauté the onion in the butter (I HATE onions so I leave it out). Mix onion, cracker crumbs, eggs, cheese & soup. Add the squash and pour into the baking dish. Cook at 400 deg. for 30 min. or till brown and firm. Optional: toast crushed crackers and sprinkle on top.

I Want A Baby!
It is a BEAUTIFUL Thursday! Why? Because I woke up to thunder, lightning, hail and RAIN!!!! I love thunderstorms. One of my best memories during college was sitting outside with my roomie Franny, and watching the storms. LOVED IT. Since that is no longer possible and I live in a very dry state (thank you USAF) I get very excited when it storms. I think storms can be so peaceful. It's great to sit outside and think and lay in bed and just listen to the weather.
I can't promise that I am going to update this thing weekly or even monthly. Just a place for me to randomly think.....and talk about ME. Okay not really. I will update with some recipes or something. Maybe.
I want a baby. A furry baby. A Bengal cat baby. Ever since my friend cat sat these Bengal cats, I have fallen in love. These animals are so beautiful and their vivid markings are ridiculous. The detail and beauty that God puts into animals amazes me. So complex and here I am getting to enjoy it. :) So I have been emailing a few breeders since March and 2 baby girl kittens are available!
